Our production process is designed to protect the purity, freshness, and authentic Cretan character of every olive oil we produce, from careful harvesting and cold extraction to controlled storage, bottling and final quality release.

Our Foundation:
Sourcing & Production Excellence

At the core of our operations is our own state-of-the-art olive mill, where we process the fruit from the Tsouderos family groves with absolute precision. To ensure consistent supply and meet the diverse needs of the global market, we also maintain strategic partnerships with a select network of premier olive mills across the region.

This dual approach allows us to combine our deep-rooted expertise with expanded production capabilities, while maintaining rigorous quality control at every stage. Whether from our own mill or our trusted partners, every drop of olive oil we handle undergoes cold extraction and is bottled in our modern facilities to guarantee that the authentic Cretan character remains uncompromised.

The stages of our craftsmanship

Sustainable Cultivation & Harvesting

Everything begins in the groves. We deploy experienced cultivation teams to monitor the olive trees year-round. Harvesting is conducted at the optimum maturity stage, using gentle methods that protect both the fruit and the tree from injury.

Immediate Transport & Sorting

Time is the enemy of quality. The harvested olives are transported to our mill within hours to prevent oxidation. Upon arrival, the fruit undergoes strict defoliation and washing using clean, running water to ensure only pristine olives enter the extraction line.

Continuous Cold Extraction

We extract the olive juice solely by mechanical means, strictly maintaining processing temperatures below 27°C. This meticulous climate control safeguards the temperature-sensitive polyphenols, legal chemical parameters, and the delicate aromatic profile of our Cretan extra virgin olive oil.

Professional Filtration & Storage

Immediately after extraction, the oil is filtered to remove micro-particles and moisture that could compromise its shelf-life. It is then transferred to our state-of-the-art, temperature-controlled stainless steel tanks under an inert gas atmosphere to completely block oxygen and light.

Automated Bottling & Quality Release

The final stage takes place in our three fully automated bottling lines. Before any batch is sealed in our premium glass, tin, or PET packaging, it undergoes final laboratory testing to verify that its chemical and sensory characteristics meet the unyielding standards of the Tsouderos legacy.

Sustainable co-products

We are committed to a zero-waste production model. The solid by-products of the olive extraction (olive pomace) are collected and repurposed for green energy heating and natural soil fertilization, minimizing our environmental footprint and respecting the Cretan ecosystem.

Uncompromising hygiene standards

Our entire production line is built with food-grade stainless steel (Inox). Automated Clean-in-Place (CIP) systems ensure that all machinery, pipes and tanks are thoroughly sanitized between production cycles, preventing any risk of contamination.

Rigorous laboratory evaluation

Every single batch of olive oil we produce undergoes strict chemical and organoleptic analysis.

We partner with certified accredited laboratories to measure exact acidity levels, peroxide values, and ultraviolet absorption, ensuring full compliance with International Olive Council (IOC) standards.

While our family mill is strictly dedicated to the cold extraction of Premium Extra Virgin and Organic olive oil, Tsouderos LTD maintains the infrastructure and strategic refinery partnerships required to supply Virgin Olive Oil and Pomace Olive Oil in volume.
